In conjunction with our exhibition “Spring Rising”, we have prepared a special menu inspired by a word of “spring”.
In addition to the meaning of the season of the year between winter and summer, spring also means “fountain” and “jump suddenly or rapidly”. Enjoy the menu while feeling those various meanings of spring.

Non-alcoholic cocktail “Spring Sour ”

A sour made with Yugawara mandarin oranges, grapefruit, and orange peel-flavored liqueur. “Spring Risin” is expressed with pearl-colored alazan.

Appetizers
Salad Bouquet with Marinated Sea Bream

The first dish is a salad bouquet that evokes the joy of welcoming spring, a season full of vitality. After tasting vegetables, pâté brie and marinated sea bream separately, you can mix and enjoy the ingredients on your plate as you like.

Soup of soy milk from the tofu shop in Hakone Ohiradai and chicken quenelles

From the meaning of fountain; The soup is made with soy milk from the tofu shop in Hakone Ohiradai, which is made with underground water from Mt. Asama, and accented with chicken quenelles and prosciutto.

Main Dish
Ashigara Venison Poêlé with Grand Veneur Sauce

From the meaning of jump; Lean venison is grilled until tender and moist, with Grand Veneur sauce, a sauce often used in French cuisine with lean game such as venison.

Dessert
Mandarin orange and chocolate mousse served with vanilla ice cream

Mandarin are a fruit that transitions from winter to spring. This mousse is made with tangerines and chocolate. The cake topper is inspired by the airy feel of the artwork by Ohmaki Shinji, “Liminal Air Space-Time,” which is on display at the beginning of this exhibition. Enjoy with vanilla ice cream.
